One of the things neither my husband nor I do very well is eat a proper breakfast before work in the morning. This leaves us starving by 10am and tempted by the pastries so conveniently located at each of our favourite coffee shops. While I decided not to make any resolutions this year I did decide to drink more water and start focussing on my health.
As you may have already heard, I am not making any New Years Resolutions this year, but for many reasons I am starting to increase my water intake. Unfortunately, plain old water gets plain old boring fast; however, I've found that by sprucing it up a bit, not only do I drink more, but I also get the age-old added health and detoxifying benefits of fresh ginger, lemon, cucumbers, and mint!
Of course, while I am sure you all know this, it still needs to be said—this is not a magic Weight Loss Soup! It only helps you lose weight if you combine it with ongoing healthy eating and exercise.
This White Cheddar and Ale Soup is one of those meals that make my husband feel loved. So loved in fact that he even offered to do the dishes! I don't know if it was the smell of bacon and garlic that filled the house or because it only took me a total of 30 minutes from the time I offered homemade soup for dinner to the time I put it in front of him. Either way, this soup recipe is a keeper!
My husband loves French Onion Soup. I have personally witnessed him eat French Onion Soup in greasy spoon diners in rural parts of this country and in swanky hotel lounges overlooking city centres while sipping $20 cocktails. He is somewhat of a connoisseur so the first time I made it for him and it didn’t quite turn out the way I hoped, I never made it again. Until now!
I'm committed (and sometimes slightly obsessed) with helping my children make healthy breakfast choices. This usually involves a little creative baking and these Blender Muffins are just as tricky (I mean creative) as my kids' favourite Breakfast Cookies and One-Minute Mug Muffins.
I have a confession to make — between the over 5,000km of driving we did through Yukon and Alaska and attending BlissdomCanada I haven't cooked (even the Canned Soup Mom version of cooking) in at least 20 days.
This recipe for Teriyaki Beef is quickly becoming a favourite in our house. The kids love the taste and I love how little thought it takes to throw this together. Not only is this recipe super easy, the entire meal can be ready in less than fifteen minutes which makes it much faster than takeout and perfect for a weeknight dinner.
There are certain recipes I hesitate to even call cooking when I make them. This Chicken Parmesan Casserole recipe is one of them. Between us, let’s call it “assembly” but when your mother-in-law comes over, we’ll call it something you’ve slaved over a hot stove for all day!
I promise your secret is safe with me and I also promise, cooking dinner doesn’t get much easier than this.
Last week I spent a few early morning hours in my son’s Kindergarten class with eight other moms. We were in charge of baking 7 apple crisps with groups totaling 28 Kindergartners. It was a fun morning and as a work-outside-the-home mom I treasure the times I can re-work my schedule to see my son’s face light up when I walk into his classroom to volunteer.
One look at my Pinterest boards and you will know I easily get dreamy about wood floors and stone countertops and premium appliances that will one day grace my dream kitchen. While the cabinet colours in my day dreams easily change from light to dark, the one thing that never (EVER) changes is the need for my dream kitchen to include a double oven.
My kids and my husband love apple pie but usually the last thing I want to do is spend what feels like hours in the kitchen peeling and slicing apples. That's why I love this recipe. It has all the taste of an apple pie with less than an 1/8th of the work!
These Cake Batter Cookie Bars take no time at all, are made with pantry staples and are always met with applause from my children and my husband. Of course, by applause I mean thumbs up and "this is so good" coming from mouths full of cake cookie deliciousness. Also, I can barely call this baking because this recipe is so easy.
The first time I made this for my husband was the summer between my third and fourth year of University. We had reconnected after three years of pre-facebook-era no contact and after a week of talking for hours on the phone he was finally driving the two hours to visit me. So I did what any 20-year-old would do—I went to the market and picked up the ingredients to have a homemade dinner waiting for him. Weird—I know—but 100% the truth.
I know I’ve said this before but those pre-cooked rotisserie chickens available in the deli section of almost every grocery store are lifesavers for busy working moms like me. Besides being inexpensive, quick, easy and very versatile, as an added bonus my kids love chicken. Personally, I like the versatile part because it lets me get creative in the kitchen without a ton of extra cooking steps.
It's that time of year again! The time of year where you stare at your pantry, then stare at your kids' empty lunchboxes then back at the pantry and wonder what the heck am I going to make my kids for lunch today? On top of that, it's 7am and your kids are demanding breakfast and that constantly running to-do list in your brain is reminding you that you still haven't figured out what's for dinner tonight either.
We all know that kids need to eat breakfast because it is the most important meal of the day. Despite being a full-time-work-outside-the-home-mom I am 100% committed to my kids having a healthy breakfast every single morning to keep them active and engaged in school and throughout their summer activities. Because of this, I am always looking for quick and easy ways to feed my kids eggs because eggs are brain food and can help with overall nutrition, memory, problem-solving skills and even test scores!
