There is something inherently timeless and irresistible about a slice of moist, yummy and rich chocolate cake served with a tall cold glass of milk. One bite brings me right back to my childhood. It doesn't quite fit with many of today's everyday food rules - no carbs, no dairy, no sugar, no flour, blah, blah, blah. I try to be ‘good’ and make healthy choices when planning my everyday meals, but there are some things that just hit the spot in a way that makes all those food rules fade away. In my book, yummy tasting chocolate cake is the perfect reason to indulge.
Call it nostalgia, but this particular combination takes me right back. I had a best friend in high school and her mom would always have a cake tin lying around somewhere on the kitchen table or in a cupboard. Rushing home from our latest after school job or track meet or study session at the library, we would always go looking for that classic chocolate cake, just waiting for us to rush in and cut ourselves a slab of it with a tall glass of cold milk. We sat around that table and ate cake and chatted about 'stuff' more times than I can count.
This cake recipe brings me right back and reminds of that cake of my youth. Extra bonus: it's crazy easy to put together. It just takes three simple steps; you throw everything into a bowl, mix it up with a wooden spoon, pour it into a pan and bake. Done! It’s moist and rich and it is as close to as-easy-as cake in a box that I have ever seen.

3/4 cup sugar
8 tbsp cocoa
1 tsp baking soda
1/2 tsp salt
1/2 cup cold water
1/2 cup cold coffee
1/3 cup canola oil
1 tbsp white wine vinegar
1 tsp vanilla extract
