Baked Ham and Egg Cups

A Delicious Breakfast With Minimal Clean-up

I'm always looking for ways to make great food without a lot of dishes to clean up, and this recipe is perfect. Easy enough for my teenager to make and yet fancy enough to serve for a special breakfast, you can mix and match various kinds of ham or smoked turkey, and even slide the cooked eggs and ham out of the ramekin to sandwich into toasted English muffins and make a breakfast sandwich.  What I love the most is that all you have left to wash are the ramekins, which you can just toss into the dishwasher! You won't get really runny yolks cooking them this way, but they are delicious.

Ingredients:

6 eggs
6 slices of really good quality sliced deli ham or turkey
fresh dill
parmesan cheese
salt and fresh cracked pepper

  Pre-heat your oven to 400 F.

  Butter the inside of six ramekins.  Line each with a slice of ham. Crack an egg in the middle of each.  Sprinkle some salt, pepper, and a bit of fresh dill over each before grating a little bit of fresh Parmesan on top.

  Set the ramekins in a 9x13 inch cake pan and set in the oven for about 10-15 minutes. Watch them carefully until you can jiggle the pan and the eggs will no longer move, but be mostly solid. 

  Remove from the oven and serve them either still in the ramekins or you you can grab a piece of the ham and they should slide right out
