Simple, sweet, and so cheap to make, this salad dressing goes especially well with Ole Salad. Homemade dressings don't last as long as the popular brands you buy at the store, but the great thing is you know exactly what is in it-no msg, loads of sodium, or other strange ingredients! All you need are measuring spoons and a jar with a lid, and you are ready to go. Make sure to use real lemon juice, not the bottled stuff. There is a huge difference in flavour!
Ingredients:
3 tbsp freshly squeezed lemon juice
1 tsp minced lemon peel
1 shallot, minced
1 tsp fresh thyme, minced
1 Tbsp honey
1/4 tsp salt
1/4 tsp cracked pepper
1/2 cup extra virgin olive oil
In a large bowl, whisk together the lemon juice, peel, shallot, thyme, honey, salt and pepper. Slowly drizzle in the oil a bit at a time, still whisking constantly. You can store this is a jam jar with a lid and give it a good shake before using.
