These tacos have been on my table quite a few times in the last couple of weeks. Whenever we have some leftover BBQ meat or fish, tacos seem to pop up on the menu the following day. I’ve changed them up a bit by adding some Vietnamese inspiration with some pickled carrots, cilantro and mango. They are the perfect blend of summer flavours, easy to put together and so much fun to eat. They are a repeat request at my home, and I’ve made them for guests a couple of times too. When you've got lemons make lemonade, right? Well a couple of weeks ago I posted a recipe for Summer Pea Risotto (which is awesome, you should try it!) and I was left with a bunch of risotto leftovers. I was having a little lunch BBQ and thought about what to do. Well, when you've got risotto, make fritters??? Ok that's a stretch, but that's what I did.
Here is a wonderful, light but hearty dish that goes so perfectly with these gorgeous summer nights. It is easy to assemble but very rich, creamy and fresh. It makes for a perfect main, but I've used it as a first or second course too, just adjust the portions.
It’s that time of year. The weather is perfect and all you want to do is get outside and soak it up. Food wise, we are on the BBQ almost every night, whipping up fast and easy meals in a snap. I’m a big big big fan of the BBQ. It is absolutely one of my favourite cooking surfaces, and the more I experiment with different recipes, proteins, vegetables, desserts, breads, etc, the more I realize it is the perfect space to create great tasting healthy food.
We had Mexican on the menu the other evening and, as usual, I was left with a bunch of texmex leftovers. All the good stuff—avocados, some salsa, some refried beans, and sour cream. So yummy! Yet how many nights in a row can I make tacos? I decided to try something different and came up with an idea for some vegetarian-style stuffed peppers. They were an awesome hit!
I pulled this salad together for the first time two weeks ago and it has been on my table 3 times since. Not because I fell in love with it, because I did, but because it has been requested. Pinky swear, it was asked for, and when the house requests a vegan dish again and again, I know I have a real winner on my hands. Salad is big news in my house. There is a big plate of one kind or another on my table almost every day, sometimes twice. I'm always pondering some new twist, a new combo and more importantly a way to integrate a healthy, high-energy punch. A new staple in my refrigerator? Maple Leaf Protonis. Protinis are a great source of protein and packed with flavour. They can be used as a healthy on-the-go snack or they can be incorporated into an everyday meal.

My meat-loving hubby has requested it too — when vegetables beat meat on the request menu, you know you have a hit.
It’s super tasty, with different textures and a great mix of vegetables, this is not a 'rabbit-feeling' salad.

Spring is finally here and with it asparagus season has arrived! You will find asparagus on my table several times a week these days, made a bunch of different ways, but this is definitely the easiest and one of my all-time favourites. The addition of this spicy homemade mayo takes it over the top, and my fool proof 30-second method with have you impressing your guests with mayo on the side all the time.

One of my hubby’s all time favourite treats is fried chicken. I’ve been experimenting with a simple recipe to give him a tasty piece of moist and crunchy chicken that’s not deep fried for some time. Here’s the result, a quick and delicious alternative to traditional fried chicken that’s finger lickin’ good. It’s really easy to put together and packs a big flavour punch. Try it out for a weekday treat, I guarantee it will become a regularly requested specialty.
With the cold weather lingering and spring around the corner, I’ve got my mind on fresh, tasty flavours. Inspired by one of my favourite destinations, I came up with this Thai inspired salad. Pomelo salads are a Thai staple, but the addition of some crunchy Asian vegetables takes this salad to the next level. Pomelos are in season now, a more mellow and drier version of a grapefruit. They are surprisingly addictive with Thai seasonings — be prepared to make these a new favourite.
This pasta is an all time favourite at my house. The recipe is based on a version of the classic pasta carbonara, a traditional Italian dish that reminds me of childhood camping trips with the family. It only has a couple of ingredients but I guarantee you'll be surprised at how tasty and delicious it is. Bonus — it's really quick and easy to pull together; you can cook up the meat and get the 'sauce' ready in the time it takes the pasta to boil.
This recipe is on our table at least twice a week. I am a big fish lover, but even those in my family that aren’t huge fans love this dish. It’s super tasty, healthy and I can pull it together in 20 minutes or less. This sauce is great on any fish, feel free to keep it in your fridge and use it on any of your favorite types. For those of you that don’t like anchovies, you can opt out, but if you’re ever going to give them a try, do it here. They pack a huge punch of flavor, and really lose their ‘fishiness’ when cooked.
This is a fantastically simple idea that is so tasty and quick to put together. The flavours of roasted green onion and sun-dried tomato pack a big punch in this dish, bringing in a bit of summer yumminess on these cold winter days. This can be put together as a "Wow!" dish for breakfast or brunch, or you can serve it as a casual dinner with a side salad.
It’s darn cold outside. Not that anyone needs a reminder, but the first thing that comes to mind in this weather is soup! Anyone who knows me, knows I am a soup girl.
