This is one of my families favourite winter soups. My family loves the hearty flavour and zesty, spicy taste.
I love this soup too, but mostly because it is so easy and quick to prepare. Little do they know, it is also really, really healthy. It's packed with veggies and low in fat; it is a great weeknight meal that takes so little to pull together.
You can make this soup in 3 easy steps. Bonus: this recipe is so easy that you don't even have to bother to chop up with vegetables before you make it! Everything goes into a pot, and then gets blended together. So easy, so good!
3L chicken or vegetable stock
1 head garlic, peeled
3 cups red lentils
2 leeks, washed thoroughly
2 cups tomato puree
2 tsp sweet paprika
2 tsp cayenne powder
1 tsp ground Italian seasoning
salt and pepper to taste
Combine all ingredients except salt and pepper in a large pot and bring to a boil. Reduce and simmer for 30 - 40 minutes until lentils are cooked through.
Blend to a smooth consistency with a hand blender. (You can also use a regular counter top blender but you may need to bend in batches.)
Season with salt and pepper to taste.
