You've probably passed broccolini at the store and wondered what it is. A cross between broccoli and Chinese broccoli, Broccolini is a tender, green, delicious vegetable you should try for dinner. A quick blanch and then toss with spicy sesame dressing makes them a perfect accompaniment roasted meat or Asian-themed dish.
Ingredients:
2 bunches broccolini
2 tbsp plus 2 tsp sesame seeds
1/2 tsp crushed red pepper flakes
2 tbsp plus
1 tbsp sesame oil
1 tbsp vinegar
2 tsp minced garlic
Freshly ground pepper
In a pot of boiling salted water, blanch the broccolini for about 2 minutes, until tender crisp. Fish them out with tongs and shock in cold water to stop the cooking. Drain them and dry well. Cut in half, if you find them a bit large.
Use a spice grinder, food processor, or your knife to finely chop up 2 Tbsp sesame seeds and ½ tsp hot pepper flakes. Stir them in a bowl with the 2 tbsp vegetable oil, sesame oil, vinegar, garlic, and pepper. Toss with the broccolini. You can garnish it with more sesame seeds and hot pepper flakes if you like.
