Hello summer! Isn't it great to feel the sun on your skin again? I love everything that comes with summer: the heat, the activities, and especially, the food. BBQs are one of my favourite things about this season. To me, there's nothing better than filling up on hot dogs and hamburgers. Then, to finish off the evening, no bake treats like my strawberry cheesecake tarts.
One of my favourite recipes growing up was my mom’s no-bake cherry cheesecake. It’s a very easy recipe with simple ingredients: buttery graham cracker crumble, cherry pie filling, cream cheese, and Eagle Brand Sweetened Condensed Milk. I used that recipe to morph into this recipe which is one of my seasonal favourites.
I'm not shy when it comes to sweetened condensed milk. I've been known to eat it out of the can with a spoon, add it to my coffee, and make up pretty much any excuse to use it in my baking. It's is a no-brainer when it comes to a lot of my homemade holiday treats like the classic Hello Dollies and my Chocolate Peanut Butter Fudge with Crunchy Toffee Topping. But what I love most is the sweet and creamy combination in my summer treats.
These Strawberry Cheesecake Tarts have a smooth filling that tastes like a premium dessert, but it’s quicker and easier than any fancy dessert and only requires five ingredients and a few minutes. This way you can spend less time in the kitchen, and more time enjoying the summer with your friends and family.
Ingredients:
8oz cream cheese
1/2 can Eagle Brand Sweetened Condensed Milk
12 frozen tart shells (pre-cooked)
12 strawberries, quartered
Whipped cream (optional)
Directions:
Mix together cream cheese and half a can of Eagle Brand (if you want to use the full can, use two blocks of cream cheese and double the rest).
Pour the cheesecake mixture into the pre-cooked tart shells and let set in the fridge for two hours.
Top with strawberries and whipped cream.
Try your best not to eat them all!
