You can steam asparagus to go with your dinner, but roasting brings out the natural sweetness and makes them extra special! I love making these for a quick side dish when time is short. Your cooking time will depend on how thick your asparagus spears are, so budget less time if they are thin and delicate than if they are thicker and sturdy. You can, if you wish, finish them off with a bit of lemon zest for a nice touch.
Ingredients:
1 lb asparagus, with the woody ends snapped off (great job for the kids!)
2 tsp olive oil
salt and pepper, to taste
Pre-heat oven to 400 F.
In a large bowl, toss the asparagus spears with olive oil and sprinkle with salt and fresh cracked pepper.
Put the asparagus onto a baking sheet in a single layer and into the oven.
Roast, checking and stirring occasionally, for about 10 minutes or until browned and tender crisp.
