If you are trying to get the family to eat more veggies, this recipe is for you. The smoky flavor of roasted broccoli is pushed over the top once you drizzle the florets with garlic butter and add pine nuts. If you don't have pine nuts handy, substitute chopped almonds.
Ingredients:
1 lb broccoli florets
2 Tbsp olive oil
2 Tbsp unsalted butter
salt and freshly cracked pepper
1/2 tsp lemon zest
2 tsp fresh lemon juice
2 tbsp pine nuts, toasted
Preheat oven to 450 F and line a rimmed baking sheet with parchment paper.
Wash, dry, and chop up the florets into bite sized pieces. In a bowl, toss them with the olive oil, then sprinkle with salt and pepper. Transfer brocolli to prepared baking sheet and spread out in a single layer. Roast in oven for about 12 minutes, or until just tender, stirring occasionally.
While the broccoli are roasting, melt the butter over low heat. Add garlic and heat until fragrant, stirring to keep it from burning. Add the lemon zest and stir. Remove from the heat and stir in the lemon juice.
When the broccoli is finished roasting, pile it into a bowl and drizzle the butter over top, then scatter the pine nuts over all.
