Here is a perfect way to use up those boring chicken leftovers and turn them into something delicious. This healthy version of the usual chicken salad is sweet and savoury with a hint of spice and a touch of crunch. It has become a lunchtime favourite at my house and in a pinch it makes a great dinner during the week too. For an uber-healthy spin, you can serve it in lettuce cups and drop the bread. Give it a try next time you have some leftover BBQ or rotisserie chicken and watch your family gobble it up. The celery adds just the right crunch, the cranberries the right touch of sweet and the mustard and curry paste give it a real hit of flavour. These days it’s a favourite for any weekend outing, easy to make the night before and tasty served cold or on the go. Easy and yummy, it’s the perfect combination of healthy, tasty, and fast!
Sweet and Savoury Healthy Chicken Salad
Ingredients
1 cup cooked chicken
3 green onions chopped
1/3 cup chopped dried cranberries
a handful of cilantro, chopped
2 stalks celery, diced
1 tbsp Dijon mustard
1 tbsp curry paste
2 tbsp mayonnaise
2 tbsp plain Greek yogurt
salt and pepper to taste
Directions
Shred or chop up chicken. This is a great way to use up any chicken leftovers in your fridge. I like to use leftover rotisserie chicken or boiled chicken I have leftover from making a homemade chicken stock.
Combine all ingredients in a bowl and mix together.
Let sit for about 10 minutes to let the flavours mix and meld.
Serve immediately or keep in the fridge for lunch the next day.
Serve on toast, on a bun, over a salad or my favourite way, on a toasted bagel with some pickled jalapeños.
