Julia Child was the original Kitchen Goddess. She bridged the gulf between Michelin-starred restaurants and home kitchens with her (fairly simple) recipes even when the pros mocked her efforts. But Julia had time to be a kitchen goddess because that was her thing.
After a day of working or wrangling kids many of us don't have the time or energy to wrestle with a leg of lamb, or prime rib, or roast chicken on a weeknight. Although it does look like fun.
Anyway...this is now and now's a weeknight and the school bus just delivered overtired kids who have to finish a Pioneer Village diorama and the dog chewed another sock and nobody has time to dance with a bird. This is why I LOVE rotisserie chicken that I haven't had to make. I've lost count of the number of times a store-bought rotisserie chicken has saved my bacon. And I'm not alone because grocery stores in every town do brisk business in the chicken trade, and it serves as the base for many recipes, like chicken quesadillas.
2-5 jalapeños per quesadilla (for the brave ones)
