This is why I LOVE rotisserie chicken that I haven't had to make. I've lost count of the number of times a store-bought rotisserie chicken has saved my bacon. And I'm not alone because grocery stores in every town do brisk business in the chicken trade, and it serves as the base for many recipes, like chicken quesadillas.
Ingredients
2-5 jalapeños per quesadilla (for the brave ones)
Makes 4-6 quesadillas.
