This Lightened-Up Baked Mac and Cheese recipe was a huge hit at our dinner table and leftovers frozen in individual containers are met with "thanks mom!" when heated up and tossed into a thermos for their school lunches. What more do you want from your dinner?
A simple mouthwatering casserole that mixes together with ease. Add a salad and your meal is complete.

Sometimes, on a chilly, rainy spring day I get a craving for some comfort food, and what could be more comforting than a big bowl of pasta with cream sauce? The problem is that cream sauce leaves me feeling bloated, heavy, and lethargic. The solution? A sauce made from avocado that delivers the creaminess I am craving, in addition to the vitamins, fibre, potassium, and good fats that my body is craving. All that in less than fifteen minutes flat!
Not only is this quick and easy recipe incredibly flavourful and delicious, but avocados are also known for contributing to healthy, shiny hair and a glowing complexion — so enjoying this dish will make you feel beautiful inside and out!

Looking for a fun dinner your kids will love? Try this dish—it is a combination of spaghetti and lasagna. You can make it into a pie shape or individual cupcakes. The best part is it is very easy to make, can be made in advance and even frozen. Or, if you are rushing home from work it can be made in under an hour. Try cooking the spaghetti noodles in the morning if you have time, throw it together at the last second and bake for 20-30 minutes. Easy as pie!

I'm usually a fan of the creamy, cheesy pasta dishes, so I've never been much of a fan of Pasta Primavera, and even the ones I've tried usually have contained cream or some type of sauce in with all the veggies. This one, with a bit of cooking water to keep it moist and a bit of cheese, is different. The veggies, blanched lightly in the pasta cooking water, are fresh and bright, leaving you feeling that you are eating something healthy and not a heavy pasta dish. With all the fresh veggies coming out at the farmer's markets in the coming months, you'll have no problem swapping around veggies to what you really enjoy. I didn't have any goat cheese (or "boursin"), and truth be told, nobody in my family really likes it all that much so I subbed what I had on hand-a good sprinkle of mozzarella.

I love this recipe for a number of reasons but most of all it's because it is so simple to make. The crisp, bright green asparagus adds great contrast in both texture and colour. The mushroom-cheese sauce pools just perfectly in the pasta shells, creating little flavour pockets that burst every time you eat another mouthful. The pepperiness of the Boursin cheese reminds you that this isn’t your kids’ mac ‘n cheese—but still wraps you in the warm blanket that only comfort food can provide.

I know I’ve said this before but those pre-cooked rotisserie chickens available in the deli section of almost every grocery store are lifesavers for busy working moms like me. Besides being inexpensive, quick, easy and very versatile, as an added bonus my kids love chicken. Personally, I like the versatile part because it lets me get creative in the kitchen without a ton of extra cooking steps. This Asian Chicken Peanut Butter Noodles recipe is no exception and combines my love of peanut butter with my kids’ love of chicken and is packed with an extra hit of whole grains by using whole wheat spaghetti. It can also be served warm as a main dish or made-ahead and served as a cold noodle salad. Either way, all I can say is yum!

Have you heard the buzz that lemon is expected to be the "flavour of the year" for 2014? Lemons add refreshing zest and flavour to recipes, like a burst of sunshine on dark winter days. Lemons are also detoxifying and naturally cleansing, which is good news to those of us who may have spent December eating and drinking like debauched Roman emperors.
This recipe is chock full of nutritious and delicious ingredients. The pine nuts add satisfying crunch as well as protein, and lemon, basil, and garlic make an amazing flavour combination. Not only that, but the whole meal can be pulled together in thirty minutes, making this an excellent choice for a busy weeknight.
