  Tell us all about your blog

  Chocolate Shavings was born in 2007 as a means to share some of my favourite recipes, food ideas and photography. Chocolate Shavings is my way to make mention of all the little cooking tricks that turn a meal from a simple cooked dish to something really special. Chocolate shavings added to top a simple dessert mousse, lemon zest grated over a simple fennel salad, or a drizzle of truffle oil added to everyday mashed potatoes are all simple touches, which, coupled with a few cooking tips make what comes out of the kitchen that much more delicious.

Growing up in France, food has always been an integral part of my life and I spent the better time of my childhood years coming up with recipes in the family kitchen. It's this passion for food that led me to start chocolateshavings.ca

  What inspired you to begin writing about food?

  I have always loved to write. After obtaining my Political Science BA, I attended culinary school in New York and decided to ally my passion for the written word with my passion for all things culinary. I have been able to turn this passion into a career.

  Describe your favorite food memory

  My favourite food memory would have to be making Sunday night dinner with my mother in Paris. Her staple dish is cote de boeuf with gratin dauphinois. She serves the meat medium-rare, topped with sea salt and Dijon mustard, and her potato gratin is the best I've ever had. Making that meal with her is always a great way to spend some good quality family time.

  Cook or bake-which one?  Either,  both, and why?

  Both! I cook almost every night, but only bake every couple of weeks—it's more healthy that way!

  What is the best thing you've ever eaten? Where did you eat it?

  My mom's Sunday night dinner, in Paris, France has to be my favourite.

  Share your favorite recipe

  It's hard to pick just one—there are so many different recipes that I enjoy. Depending on my mood and the time of year, my answer would definitely vary! For this time of year, as the weather is getting colder, I would turn to my poached pears with chocolate ganache.

She may go by the name Scatteredmom online, but Karen really is anything but scattered when it comes to the kitchen.  Churning out tasty treats within view of the Georgia Strait on Canada's west coast, Karen will hand you an organized weekly meal plan or teach you how to make meals from scratch.  As Mom to a teenage boy, she knows exactly what it takes to keep kids full and happy-which has really come in handy with her job as the Food Editor at Yummy Mummy Club.

A strong supporter of Food Revolution who has been endorsed by Jamie Oliver himself, by day Karen can be found working as a special education teaching assistant, running a kitchen and showing teenagers how to cook nutritious meals for themselves.  By night, when she's not chatting on Twitter and answering cooking questions,  she writes her popular blog Notes From the Cookie Jar, or posting mouthwatering recipes over at Chasing Tomatoes.  Not afraid to give her opinion and passionate about community, Karen spoke at Blissdom Canada 2010 and her writing has been published in Canadian Living magazine, as well as in various online publications.
