Top Quebec Restaurants to Serve Squirrel, Muskrat, Beaver

How do you feel about eating muskrat, hare, deer, and beaver? How about squirrel? Are you game?

According to an article in CBC, wild game meat has been given the green light from the provincial government allowing certain Quebec restaurants to serve it to punters.

Joe Beef and Au Pied de Cochon are among ten Quebec restaurants permitted to cook and sell wild game.

“It’s not going to be this giant slaughter. We’re just trying to do it slowly, properly, and manage it well," said Joe Beef Chef David McMillan, who plans to start serving the fare this Spring. He also reassures skeptics that squirrel tastes "delicious"—like a cross between hare and quail.

“Squirrel is not an odd thing, it might sound odd, but it’s not,” concurs Martin Picard, a chef at Au Pied de Cochon.

Quebec's Wildlife Minister Yves-François Blanchet feels the move celebrates Quebec's cultural heritage and history.

Needless to say, chefs are excited at the culinary gauntlet, but it remains to be seen whether customers will savour the flavour?
