Sometimes you just need a little something to get the kids to eat a bit of noodles with veg in them, or some raw veggies that you put on their plate. This peanut sauce is a bit sweet and savory but with no spice—just the perfect accompaniment. Serve it with salad, rolls, chicken fingers, raw veggies, or boil up some soba or rice vermicelli and toss with it along with the kid's favourite veggies. They'll love it.
Ingredients:
1/2 cup smooth peanut butter
1 lime (juice and zest)
2 tsp sesame oil
4 tbsp sweet chili sauce
4 tbsp rice vinegar
4 tbsp tamari or soy sauce
1 tbsp maple syrup
4 cloves garlic,minced finely
2 tbsp fresh ginger, peeled and grated or minced finely
1/2 bunch cilantro, chopped (optional)
1/4 cup vegetable oil
Whisk all ingredients except the oil in a bowl until smooth. You may need to get a damp washcloth to put under the bowl on the counter so that it doesn't move around on you. Next, add the oil in a slow, steady stream, whisking as you go, until it all emulsifies and comes together.
Store in the fridge in an airtight container for a few days.
