Running out of ideas for snacks? Try this simple & healthy hummus recipe, ready in less than 5 minutes, while the corn is popping.
Hummus
• 1 can (398ml) of chick peas (or 2 cups if you cook them yourself)
• 1-2 crushed garlic cloves
• 2 tbls of tahini (sesame butter)
• ¼ cup of extra-virgin olive oil
• The juice of 1-2 lemons, to taste
• Kosher salt to taste
1. Blend all the ingredients together until you get a smooth consistency.
2. Serve with triangles of pita bread, corn chips and veggies.
Yellow Popcorn
On the stove, like my mom used to make it!
• 2 tbls of extra-virgin olive oil
• 1 teaspoon of turmeric
• 1 cup of organic corn kernels
• Kosher salt to taste
In a pan, heat the olive oil on high to medium stove, add the turmeric and mix it with the oil. Then add your kernels and stir well to coat them with the yellow paste. Close the lid and let it pop until done.
Warning: DO NOT open the lid while it is popping.
Tip: Tell your children that turmeric offers protection to their cells, like gear to a hockey goaltender, or a helmet when you ride a bike. It is very good for you. If they don’t believe you, sit together and read the list of ingredients on a pouch of microwave popcorn!
My Personal Story: I do not own a microwave oven because I don’t like what it does to food. I believe it kills the taste and the vitamins in the food. When my daughter’s friend Samuel first came to our house he went: “What? You don’t have a microwave? How do you make popcorn”? I made him my yellow popcorn and he loved it!
For Mummies: This is a low calorie, no guilt, healthy snack. You can eat as much as you like, and unlike chips or other salty treats, you won’t see it on you hip and it’s even good for you. Perfect for when you get the munchies!
