I don’t know about you, but whenever I smell anything with coconut in it, I’m instantly transported to a warm, tropical beach. The same applies to the sight of a pina colada, one of my favourite vacation indulgences when I venture south. I have to admit, though, that pina coladas can sometimes overly sweet and filling, making them not an ideal choice when I’m craving something refreshing. My solution? A three ingredient pina colada makeover that’s so delicious, it’s hard to believe it’s low in calories! One of the things I love about this recipe is that it doesn’t have any ice in it, so the flavour of the drink doesn’t get diluted as you sip it.
Lovely Low-Cal Piña Colada
Ingredients:
2/3 cup chilled, unsweetened coconut water
6 – 8 tbsp chilled premium vodka or rum *
1 cup frozen pineapple chunks
* my new favourite is Bob’s Super Smooth Vodka, which is made from whey rather than grain or potatoes. It’s gluten-free and has a really mild flavour, perfect for this cocktail!
Directions:
Put all the ingredients in a blender and process until frothy and smooth.
Makes 2 delicious, refreshing cocktails.
