S'mores Cookies

Yesterday was busy with swimming, BBQing, and relaxing. My Laundry Monday turned into Laundry Tuesday topped with an additional load of damp swimming towels. Being the good parents we are we counted swimming as baths for the kids and sent them to bed smelling of sunblock.
Then as I snuggled on the couch to write a post about these cookies I brought to our BBQ I just...could not...keep...my eyes...open. *Snooze*
These S'mores Cookies are a perfect hello to summer. I've seen these floating around the web and you know how much I loved these S'mores Bars [2] so I had to give 'em a try.
These cookies have a graham cracker base with a chocolate chip cookie sprinkled with chocolate and marshmallows topping it. The crunch of the graham cracker with the gooey cookie is the perfect combination.

S'mores Cupcakes

In my opinion these are closest to a real S'more as any baked good can get. It uses real marshmallows, I opted out of doing the marshmallow fluff method (the original recipe calls for) because how often do you make a S'more over a campfire with fluff? Good luck with that if you do =). Also, this method is much simpler than making your own marshmallow fluff. As far as the graham cracker of this S'more Cupcake goes, you will notice the recipe calls for graham flour. This is an ingredient not found in your typical household, but it's an essential ingredient to this recipe because it gives the cupcakes that delicious, authentic graham cracker flavor. It is an interesting ingredient that's very similar to wheat flour but the grinding process of the flours is different. You can find it in the health foods section of the grocer and if you can't find it there you can purchase it online here [4]. One of best part of these delightful cupcakes are, of course, the chocolate! Martha Stewart's cupcake recipe calls for a chocolate ganache glaze, I don't want a glaze, I want a thick topping of chocolate ganache more like the thick layer of decadent chocolate you'll find in a real S'more.
I've made these cupcakes twice, once as the fully original recipe and once this way with a thicker ganache and using marshmallows rather than fluff. I wanted something simpler and also I like to post recipes that don't require fancy kitchen tools, like a kitchen torch (because not very many kitchens have those). If you'd like to stick with the original recipe, using homemade marshmallow fluff and chocolate ganache glaze you can find the fully original recipe on a blog post here [5]. Summer is officially over and this disappoints me. It’s not that I have a dislike for Autumn because as far as seasons go, it’s just like the perfect porridge, not too cold, not too hot, but juuuuust right. However, with Autumn now here, it means another season has come and gone. I’m sure one day I will explain why the departure of Summer saddens me, but I can’t put it into words right at this moment. And yes, I know I am being all cryptic right now and I apologize for that.
With all that said, I’m trying my best to embrace a new season with Autumn now here. When I think of Autumn, I think pumpkin. But as I said, I’m still not totally ready to let go of Summer which for me is often symbolized by making and eating s’mores around a campfire.

Peanut Butter S'mores Bars

Sometimes I just can’t stop thinking about dessert. Sometimes, as in 365 days a year.
I don’t stand a chance focusing on an-ee-thing for one second when I have images of buttery graham cracker cookie dough layered with chocolate, peanut butter, and marshmallow cream running through my brain. And drool running down my chin. And legit chocolate stains on my white spring jacket. Hmph. So much for being fresh and cute.
I’ve thought of these Peanut Butter S’mores Bars at least 7 times today and it’s been a week since I actually made them.

S’more Than You Can Handle

Sometimes life gets too busy for dessert. You’re playing defense, offense, triangulating with co-workers and family members to keep the things moving with forward momentum and with as little conflict as possible, right? By the time you finish up all this life-playing, you’ll probably have enough time to catch a syndicated Seinfeld episode before falling asleep.
Wrong. You still have time for this s’mores bar recipe, which is super easy and pretty much fail-proof. The only difficulty comes with the wait period in which the chocolate needs to set.
Oh, and Cocoa Pebbles is my secret ingredient to keep the chocolate portion from being too rich and give it a textural contrast.
