Simple, sweet, and so cheap to make, this salad dressing goes especially well with Ole Salad [1]. Homemade dressings don't last as long as the popular brands you buy at the store, but the great thing is you know exactly what is in it-no msg, loads of sodium [2], or other strange ingredients! All you need are measuring spoons and a jar with a lid, and you are ready to go. Make sure to use real lemon juice, not the bottled stuff. There is a huge difference in flavour!
Ingredients:
3 tbsp freshly squeezed lemon juice
1 tsp minced lemon peel
1 shallot, minced
1 tsp fresh thyme, minced
1 Tbsp honey
1/4 tsp salt
1/4 tsp cracked pepper
1/2 cup extra virgin olive oil
In a large bowl, whisk together the lemon juice, peel, shallot, thyme, honey, salt and pepper. Slowly drizzle in the oil a bit at a time, still whisking constantly. You can store this is a jam jar with a lid and give it a good shake before using.
