Tender lettuce, spicy radishes and creamy avocado are topped with a zesty mustard dressing, sure to be at home on your dinner plate next to some buttermilk chicken [1]! This salad is very quick to make, and the dressing is as easy as one, two, three. Get the kids involved by getting them to tear lettuce leaves and shake a mason jar with the dressing ingredients inside to mix it up.
Dressing Ingredients:
1 tbsp red wine vinegar
2 1/2 tsp Dijon mustard
salt and pepper
2 tbsp grape seed oil
2 tbsp extra virgin olive oil
Salad Ingredients:
1 head butter lettuce, torn into bite sized pieces
8 slender pink French breakfast radishes or baby round red radishes, sliced thinly
1 scallion, white and pale green parts only, thinly sliced at an angle
2 tbsp roughly chopped fresh dill
1 avocado, halved, pitted, peeled and dill
In a large bowl, toss together the lettuce, radishes, scallions, dill, and slices of avocado.
For the dressing:
Measure out the dressing ingredients into a mason jar, screw on a lid, and shake well until well mixed. Serve with the salad.
