Growing up, Eagle Brand Sweetened Condensed Milk [1] was synonymous with the popular dessert, Hello Dolly bars (or, as they are known now, Magic Cookie Bars [2]). My mom always had a couple cans on hand in the pantry for this one dessert that showed up at so many of our parties, picnics, and pot lucks.
Growing up in Jamaica, sweetened condensed milk was basically everything: a delicious addition to porridge, the ingredient that makes carrot juice so good, and a topping to be slathered on hardough bread for a quick lunch. Then, I met my husband, and condensed milk also became a staple item on our grocery list, along with bread, bananas, and eggs. It's the one ingredient I can always count on finding in our pantry.
Of course, sweetened condensed milk has many other uses — not surprising for an ingredient over 150 years old. Try combining it with acidic fruit juice to form a delicious pie, pudding, or other dessert! Just think, this is the perfect way to whip up a sweet summer treat without slaving over a hot stove.
Speaking of sweet summer treats, one of my favourites is ice cream paired with sweetened condensed milk, a magic ingredient when it comes to making a creamy, no-churn ice cream base. My roasted marshmallow ice cream recipe is a cool twist on a classic campfire tradition.
Roasted Marshmallow Ice Cream
Ingredients:
2 cups mini marshmallows
2 cups whipping cream
1 can Eagle Brand Sweetened Condensed Milk
Directions:
- Pre-heat oven to 400°F.
- Line a baking sheet with parchment paper and arrange marshmallows on the prepared baking sheet in a single layer.
- While waiting for the oven to reach temperature, whip the cream in a stand mixer until it forms stiff peaks.
- Fold in Eagle Brand Sweetened Condensed Milk. Set cream mixture aside.
- Bake marshmallows in pre-heated oven for 4 minutes.
- Immediately scrape into the cream mixture and mix with stand mixer until well combined.
- Scrape into a metal loaf pan and cover with aluminium foil, then freeze for 6 hours or more.
