Sometimes you just need a little something to get the kids to eat a bit of noodles with veg in them, or some raw veggies that you put on their plate. This peanut sauce is a bit sweet and savory but with no spice—just the perfect accompaniment. Serve it with salad, rolls, chicken fingers [1], raw veggies, or boil up some soba or rice vermicelli and toss with it along with the kid's favourite veggies. They'll love it.
Ingredients:
1/2 cup smooth peanut butter
1 lime (juice and zest)
2 tsp sesame oil
4 tbsp sweet chili sauce
4 tbsp rice vinegar
4 tbsp tamari or soy sauce
1 tbsp maple syrup
4 cloves garlic,minced finely
2 tbsp fresh ginger, peeled and grated or minced finely
1/2 bunch cilantro, chopped (optional)
1/4 cup vegetable oil
Whisk all ingredients except the oil in a bowl until smooth. You may need to get a damp washcloth to put under the bowl on the counter so that it doesn't move around on you. Next, add the oil in a slow, steady stream, whisking as you go, until it all emulsifies and comes together.
Store in the fridge in an airtight container for a few days.
