With the holidays around the corner, there seems to be a never ending string of parties and celebrations lined up. Reliable recipes that are easy to assemble and look impressive are at the top of my list, and this is one of them. 

I put this together at the last minute a few years ago and was so overwhelmed by the response that its been a favourite ever since. You can pull it together with a few basic items and the best part is that it requires no cooking!!! It’s as simple as layering the ingredients and actually looks best when it’s quick and messy. 

This is the perfect dessert to get the kids involved, they can help with every step and they will be so impressed with their masterpiece.  You can experiment with fruits and flavours, there is no wrong way to  go.

Chocolate Raspberry Trifle

 

Ingredients

1 pound cake
2 pints raspberries
2 bananas
4 portions of your favourite chocolate pudding
1 cup whipped cream (I like to use 250ml whipping cream with a dash of icing sugar to taste)
1/4 cup of your favourite liquor (optional - you can use orange juice instead)
1/2 tsp cocoa for dusting

 

Directions

 Slice pound cake into slices.  Tear slices into pieces.  This is the perfect job for youngsters!

 Whip cream into stiff peaks, add sugar and set aside.

 Gently combine whipped cream and pudding.

 Wash berries and slice bananas.

 Layer ingredients.  I like to sprinkle the pound cake layers with a little liquor to keep the cake moist and add a little kick.  Feel free to substitute with orange juice.

 Top with whip cream and dust with cocoa.

 This dessert looks particularly great in a tall glass container.  Let your kids go to town with assembly and watch them serve their masterpiece with pride.
