Sweet and Tart Passover Lemon Squares

Lemon Squares So Good You Will Never Know They Are Passover Friendly!

These lemon squares are not just good for Passover, they are actually DELICIOUS lemon squares! Lemon squares are a sweet and tart treat any time of the year, but these ones are suited perfectly for Passover. And bonus: they're easy to make with just a few ingredients.

 

Ingredients:
1 can coconut macaroons
1/4 cup coconut oil, melted
1 1/2 cups sugar
4 eggs
1/2 cup lemon juice (squeezed from 1 large lemon)
2 tbsp potato starch
powdered sugar for dusting on top

 

Directions:

  • Spray a 9x13 baking dish with nonstick baking spray well.
  • In a food processor mix coconut macaroons until they are fine crumbs. 
  • In a medium size bowl combine coconut macaroon crumbs with melted coconut oil.
  • Press coconut macaroon/coconut oil mixture into bottom of sprayed pan.
  • In a food processor mix together sugar, eggs, lemon juice and potato starch until smooth.
  • Pour mixture on top of crust.
  • Bake 30-35 minutes or until outside edges are browned.
  • Allow to cool. Dust with icing sugar.

Serves 6-10 people

 

* The crust on these lemon squares gets absorbed by the filling. If you want a thicker crust double the macaroons and coconut oil.
