Yummy GrandMummy 5-Minute Chocolate Cake

My good friend Marilyn Bicher is a great cook and a darn good baker, too. As a Bubby (Grandmummy), one of the things she likes best is to cook with her 8 grandchildren. For them, working together in the kitchen is a great bonding experience and they all really 'get into it.' With the older kiddies, she's teaching them some of the wonderful recipes that were passed down to her from her mom and grandmother. And for the younger grandchildren, making cookies, cakes, smoothies and pancakes together becomes a lesson in reading, math, logic and hand/eye coordination.
 
Marilyn knows that I'm not such a great cook, so whenever she finds a real easy recipe she passes it on to me. I love this one and thought I'd pass it along to all of you to try with your own kiddies and grandkiddies. I call it the 'Yummy GrandMummy 5-Minute Chocolate Cake in a Mug'.
 
Ingredients:

4 tablespoons flour
4 tablespoons of sugar
2 tablespoons of cocoa
1 egg
3 tablespoons of milk
3 tablespoons of oil
3 tablespoons of chocolate chips (optional)
Small dash of vanilla extract (optional)
1 large coffee mug


  Add dry ingredients to the mug and mix well.
  Add the egg and mix thoroughly.
  Add milk and oil and mix.
  Add chocolate chips (if using) and vanilla and mix.
 
P.S. When Marilyn and her three year old grandson, Natey make this cake they crack the egg separately into a small bowl and then added it to the mixture. To avoid the inevitable bits of shell in your own mixture, I suggest you do the same.
 
  Place mug in microwave and cook for three minutes at 1000 watts. The cake may rise over the top of the mug so don't be alarmed if it does. Allow it to cool a little and then tip it out onto a plate (of course, you can also eat it straight from the mug). It serves two easily. Enjoy, everybody!
