Tomato Bocconcini Salad Recipe

A Quick, Easy And Healthy Lunch Box Idea

Running out of ideas for the lunchbox? Try this simple & healthy tomato-bocconcini salad, ready in 5 minutes.

  3 or more mini-bocconcini sliced
  1 plum tomato sliced
1 splash of extra-virgin olive oil
  1 bouquet of basil
  1 Lebanese cucumber sliced sideways

Complete with a piece of whole wheat bread cut in triangles and an apple.

Tip: Tell your children that basil is good for them, they will understand and like to know that it is a calming herb. It can help when they are emotionally stressed or worried. Like the first days of school for example...

My Personal Story With Basil: My daughter Dahlia loves going to bed with a bouquet of basil, it helps her fall asleep. Every night, she comes to the kitchen and picks a few leaves from the plant before she goes to her room. Try giving some to your kids when they can’t find sleep. I promise you they will ask for more...

For Mummies: Basil is relaxing for mummy as well. Try this ‘One thousand and one nights’ before going to bed: add a bunch of basil and an orange zest to a cup of hot water. Let it sit for 5 minutes and drink slowly and peaceful.
