Healthy food doesn't have to be hard

Today I had the pleasure of helping McCain launch some of their revamped food products.  We looked at the labels and discussed this company's initiative to make sure that their foods contain, well, food. 

I demo'd this recipe to show how easy it is to incorporate a cconvenient food into a healthy life.  Of course, everyone asked for the recipe afterward.  You could make the whole thing from scratch, adding the step of washing and cutting your own sweet potatoes.  But, this handy package speeds things up.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Sweet Potato Salad

Serves 6

1 package McCain Purely Potato Sweet Potatoe Chunks

¼ cup extra virgin olive oil

2 tbsp white wine vinegar

1 tsp grainy mustard

3 stalks celery minced

1 shallot, minced (or ¼ red onion)

Chives minced to taste

1/4 cup cooked minced bacon

Empty entire package of sweet potatoes onto a cookie sheet and toss with a tablespoon of oil. Bake at 400F for about 20 minutes. 

Make vinaigrette by whisking together remaining oil, vinegar and mustard. Mince celery, shallot and chives.  Toss dressing into cooked potatoes and serve warm over a bed of greens. Salt and pepper to taste.

Notes: This is a great side dish to grilled chicken or fish or can be a vegetarian entrée by removing the bacon and adding a can of drained beans.
