Barbecue, barbecue, where for art thou barbecue? I am dying indoors during this long, dark winter but can’t bear the walk a mere 10 feet to lift your lid and welcome back spring. But, I am missing your tender kisses and the easy way you complete me with dinner.
Harumph, he didn’t answer.
Guess I will have to take care of this craving myself and indoors with some other appliance. In my moment of need, I have turned to the slow cooker. Not quite the sizzle but the outcome is just as easy and the pulled pork tastes just as fine on the bun.
Ingredients:
2 cups barbecue sauce
1 can canned pumpkin
1 teaspoon pepper
1 tablespoon dried thyme
1 tablespoon chili powder
3 pounds pork roast -- boneless
12 whole grain dinner roll
Mix together barbecue sauce, pumpkin, pepper, thyme and chili powder.
Place pork roast into slow cooker, pour sauce over, cover and turn on high for 6-8 hours.
Once cooked, remove roast from sauce and pull apart with two forks, return to sauce and serve over buns.
