Winter Arugula and Apple Salad

Fall Arugula and Apple Salad

This salad is perfect for cold weather, combining fruit, vegetables, and protein in a salad together.



1 sweet potato, peeled and diced
1 tbsp olive oil
2 cups arugula, lightly packed
2 apples, diced
10 slices turkey bacon, cooked according to package directions

1/2 cup olive oil
3 tbsp red wine vinegar
1 tbsp fresh lemon juice
2 tsp sugar
1/3 tsp salt



  • Preheat oven to 400.

  • Toss diced sweet potato with olive oil. Roast for 20 minutes, toss potatoes, roast another 15 minutes or until slightly crispy on the outside.

  • Allow to cool 15 minutes. (Can be done in advance.)

  • Cook turkey bacon according to package directions and until crispy. Allow to cool and break turkey bacon slices into small pieces.

  • In a large bowl combine arugula, sweet potato, apple, and turkey bacon pieces.

  • Add vinaigrette. Toss lightly.

Makes 4 servings as a side dish or 2-3 as a main course
