My husband and I are finding that we're getting bored of our weeknight meal rotation—we seem to have four or five recipes that we stick to on those nights when we don't feel like making anything fancy. Our go-tos lately have been breakfast dinners, DIY Kung Pao Chicken, Peanut Thai Chicken Thighs, homemade hamburgers, this delicious pasta bake, and leftover homemade soups. These are all amazing and will remain our go-tos, but I thought I'd try something new—something to add to the rotation. I've always loved the idea of having stuffed peppers, but haven't tried making them. Until now. They were a hit with my whole family, including my seven-month-old! These stuffed peppers were so delicious and took me no time at all to throw together. Best of all, there are only five ingredients! We paired them with baked acorn squash, and that's all we needed!

One of the fun things about recipe creation is making delicious dishes out of unexpected ingredients. It’s fun to make cookies with beans or pumpkin loaf with lentils, and it’s cool to make ice cream out of bananas and pudding out of avocados. But this chocolate mousse pie is an unbelievably simple, yet positively scrumptious dessert, and the secret ingredient is a humble block of tofu. It tastes decadent without actually being so. Most mousse recipes rely on eggs and heavy cream and are a bit complicated, but this one requires only five ingredients and ten minutes to throw together. If you were so inclined, you could skip the crust and serve the mousse as-is, but the combination of the coconut oil and cookie crumbs is quite lovely. Give it a try, and I guarantee you’ll never look at tofu the same way again!

If you're like me, you're busy, which means you're constantly on the look-out for quick, easy, make-ahead recipes that your family will actually eat. I like this meatloaf recipe because it is all of that and freezes well too.
I have prepared this meatloaf, thrown it in a pan and left it covered in the fridge all day then baked it when I got home. I've also made it the night before and then sliced and re-heated in the microwave. Either way it always tastes great.
I usually serve this with mashed potatoes and steemed vegetables but it also makes FABULOUS meatloaf sandwiches if you slice thinly and put on crusty white buns (topped with cheese of course!).
As an extra bonus, this is also one of my kids' favourite school lunches. Which as you know, when you can put leftovers in school lunch boxes it's a win-win for everyone.
