How To Pack More Nutrition Into Pancakes And Muffins

I have a picky eater at home, so I need to find ways to sneak fruits, veggies, and fibre into his diet. He's a carb-loving kid and loves pancakes, breads, and muffins, so I've found a trick to add fibre and more of the good stuff into the things that he loves to eatwithout forgoing any taste.

For any recipe that calls for flourfrom pancakes to muffinsI half the amount of flour I use and substitute ground chia seeds and oat bran, instead. For example, if the recipe calls for two cups of flour, I use:

  • 1 cup flour (white unbleached)
  • 1/2 cup ground chia seed (my coffee grinder is great to use for this)
  • 1/2 cup oat bran

My kids can't tell the difference and you won't either!
