Asian Tuna Cakes

I got adventurous the other night and decided to get rid of one of the many cans of tuna fish in our pantry and I went to the VH Sauces website for inspiration. The recipe? Asian Tuna Cakes. I wasn't sure how my two kids and husband were going to take to the tuna flavour so I improvised by doing half tuna and half shrimp (look at me channeling my inner chef). The result? They loved it (especially the VH Plum Dipping Sauce) ! It was easy to make and the thing I love about this recipe is that I can play around with the ingredients to make it a little different every time.

Oriental Chicken with Macaroni

Hoisin Meatballs With Pineapple

One of the great things about being Editor of the Yummy Mummy Club is I get to preview everything before it goes live to you.  So when I saw Erica’s t.v. piece where she learned how to roll meatballs for this yummy recipe, I knew I had to try it.  But I also know my kids and there was no way they were going to eat red peppers.  Trust me, I’ve tried.  So I substituted mushrooms for the peppers and grated carrots and zucchini into the meatball mixture. I also used ground turkey instead of beef.  The results?  Both kids gave it a two thumbs up plus a “do-again” rating.  Not a small miracle in my house.

Butter Chicken

I’m an Indian food junkie – I just can’t get enough. Yet my lifestyle is at odds with making it at home (too time consuming with a business to run and three small children), and eating out isn’t in our budget many months. I’ve tested every single jarred butter chicken sauce available at my local grocery store, and the VH Butter Chicken Sauce is hands down the best. Browsing around the VHsauces.ca website recently I found two intriguing recipes – one for Butter Chicken Meatballs, and one for Butter Chicken Pizza. Both were a hit and have been added to our family recipe binder – a collection of tried and true recipes my family loves. Those two recipes even made it into the “Would Serve to Guests” category of the binder (a rare feat).

General Tao Chicken

I suck at following recipes.  But I don't suck at throwing General Tao-smothered chicken breasts in a covered casserole into the oven for 45 minutes!  Once done, I cube the chicken and toss it into cooked linguini and steamed broccoli (read: microwaved!) and a little extra General Tao.  With little to no effort on my part, I've maximized my Twitter time, and cooked a nutritious and tasty Asian-inspired meal for the fam!

 Zesty Chicken Skewers

My fav is the zesty chicken skewers because my kids LUV eating food off sticks (who doesn't?).  Plus, I can prep it while the kids are at school and then cook it in an easy-breasy 15 minutes.  Add in cut cucumbers & carrots and it's a completely healthy finger-food meal for the whole family.
