Janet and Greta Podleski are famous for putting the yummy into healthy cooking. If you’ve tried their cookbooks Eat, Shrink and Be Merry and Looneyspoons, you know what we mean. So what do they have cooking these days?
Janet and Greta recently teamed up with Hallmark Canada to launch a humorous collection of grEATing cards, featuring lip-smacking, healthy recipes. The cards are available at Hallmark Gold Crown Stores across the country.
They’ve also been thinking a lot about how to create low fat alternatives of traditional family recipes that kids will love. Here are some of their tasty ideas for making healthy alternatives of your kid’s favourites. These recipes, and others can be found in the grEATings card line.
Lasagna – This all time family favourite can be transformed with a few simple steps. Try substituting extra lean ground turkey and lean Italian sausage for ground beef. Use whole wheat lasagna noodles and light ricotta cheese and feta cheese.

Fried Chicken – Next time your kids want to order in fried chicken, make a healthier, crispy coated oven fried chicken dish at home. Coat skinless chicken thighs and skinless drumsticks in bread crumbs and bake them in your oven. Janet and Greta’s recipe for Kentucky “Freud” Chicken is sure to get them psyched about dinner.
Tacos - Spice up your family’s favourite Mexican dish by tossing away some of the fat. Use whole grain flour tortillas for tacos. Replace regular cheddar cheese with a reduced fat version and add light sour cream (3% or 5% fat). Substitute chicken, instead of higher fat cuts of meat.

Make clever substitutions. It’s easy to cut fat, boost flavour and add nutrients. Try some of these helpful hints next time you are preparing your family’s favourite:
• Replace mayonnaise in egg salad sandwiches with fibre-filled hummus.
• Use small amounts of strongly flavoured cheeses like sharp cheddar, Swiss or Parmesan in sauces or casseroles. Look for part-skim varieties.
• Substitute 2% evaporated milk for some or all of the cream in soups and sauces.
• Whirl 1% cottage cheese in a blender until perfectly smooth and use it to replace half the cream cheese in a baked cheesecake recipe.
• Add fibre to muffins and loaves by blending all-purpose flour with wheat bran in a 3:1 ratio.
