How To Freeze Pancakes

My kids (and husband) LOVE pancakes. Often on Saturday mornings you can find me whipping up a batch big enough to feed our family and to have a few leftover to toss into the freezer for a quick and easy weekday breakfast.

Simply choose your family's favourite pancake recipe and cook a few extra. When the extra pancakes are completely cool, stack one of top of each other with a piece of wax paper between each and then place in freezer bag and freeze. Alternatively, you can flash freeze the pancakes in a single layer on a cookie sheet (approx. 15-20 minutes) then place in freezer bag and freeze (no need for wax paper).

When ready to use your freezer pancakes, just pull out the desired amount and toast them in your toaster until defrosted.

Between shuttling kids to dance or cheer practice, tae kwon do, hockey, or baseball, she often finds herself in the kitchen looking at three hungry children (and a husband) and a clock ticking towards dinner time.

Working a fulltime job from home with three kids under 12 means Maija often runs her household with a phone in one hand and a wooden spoon in the other, so she appreciates quick, healthy meals, prepared on a budget – and that’s what she delivers at both and on as Canned Soup Mom.
Her simple-to-prepare recipes have become the go-to meals for thousands of families, and Maija was recently named one of the Top Mom Food Bloggers in North America and given #2 honours in the budget-friendly recipes category.

The kids are on-board with these plans, and only partially because Maija keeps a mean supply of delicious treats in her travel kit.
