Soba noodles are a thin noodle made from buckwheat flour used in Japanese cooking. In this recipe they are tossed with a mild soy dressing and vegetables that kids will be sure to enjoy. My family loves these noodles as they are so full of flavor we couldn’t stop eating them! 5-spice chicken drumsticks would be a great partner to this salad!
Ingredients:
1/2 cup water
1/4 cup soy sauce
1 tbsp seasoned rice wine vinegar
1 tbsp liquid honey
1/4 tsp Asian chili sauce
8 oz dry soba noodles
1/2 cup sliced green onions
2 cups julienned carrots
1 cup julienned sugar snap peas
2 tbsp toasted sesame seeds
In a small saucepan, bring the water, soy sauce, rice wine vinegar, honey, and chili sauce to a boil, stirring. Remove from the heat and allow to cool slightly.
Bring a large pot of water to a boil and cook the soba noodles for about 2 minutes, or until el dente. Drain.
In a large bowl, toss the noodles with the dressing, carrots, green onion, and sesame seeds. It will seem like there is a lot of dressing but the noodles will soak it up.
