Smashed Garlic Red Potatoes Recipe

I always used to think that you had to peel mashed potatoes, but the reality is, you don't.  These ones leave the peels on-which is great if you are in a hurry.  A few cloves of garlic in the pot mash up nicely and add some great flavor, too!  You can use your own judgement with the butter and milk, adding a little more or less if you like. Sometimes I also like to add a little zested lemon and minced chives. Serve with your favourite comfort dinner!

Ingredients:

8 medium red potatoes
2 cloves of garlic, peeled
1/4 cup butter
2/3 cup hot milk (or you can fill your measuring cup with 1/3 cup cream/whipped cream, 1/3 cup milk)
salt and cracked black pepper to taste.

  Cut potatoes into 4-6 pieces and place in pot. Fill with enough cold water to cover. Add garlic. Boil until potatoes are tender and drain well.

  Add potatoes back to pot and set the pot back on the stove to steam dry. Add the butter and begin mashing the potatoes up.  Add 1/2 of the milk, the salt and pepper, and mash a little more. Continue to add milk until you have the consistency you want, but be careful not to over mash the potatoes or they will become gluey. Taste and adjust as you see fit.
