I have a weakness for Oreos. I'm not sure if it's the chocolatey crunch or the sweet filling, but nothing compares to them and I love finding new ways to feed my love for them. These truffles are absolutely delectable, and with only three ingredients they are very easy to put together. Try enlisting the kids to help, and you can package them up to deliver to teachers or friends for a sweet surprise.
Ingredients:
1 package (350 g) Oreos
one 8 oz package of Philadelphia Cream Cheese, softened
2 eight oz packages of Baker's Semi Sweet Chocolate
Crush up the Oreos. You can do this in a food processor, or put the cookies in a Ziploc bag and let the kids crunch them up with a rolling pin. Set aside 1 tbsp of the crumbs. Stir in the cream cheese until well blended. Again, I used a food processor so it was really easy. You can also use an electric mixer, if you wish. Cover the mixture and chill.
Roll the cream cheese mixture into 1 inch balls and chill for another 30 minutes.
Meanwhile, melt the chocolate in a double boiler over hot, not boiling water. Line a baking sheet with waxed paper and gently dip each ball in the chocolate. Sprinkle some of the crumbs over top.
Let the truffles set for about an hour.

Variation:
Valentine's Day: Try topping with pink/red sprinkles to make them festive, or heart-shaped sprinkles. You can even press a cinnamon heart into the chocolate while they are wet.
Easter: Top with pastel colored sprinkles while the chocolate is wet.
