Mango Sorbet Recipe

It’s hot outside and you need a way to cool off.  Why not try your hand at making sorbet?  If you have an ice cream maker this is hands down one of the coolest way to eat your fruit.  For adults you can spice it up with a splash of rum, or substitute vanilla extract for the kids.  All you need to do is whir up the fruit with a little sugar, water, and lime juice and you are good to go.  Try serving with slices of angel food cake, berries, in meringue shells, or by itself for a quick and easy dessert!

Ingredients:

2 large, ripe mangos  (approximately 2 lbs)
2/3 cup water
2/3 cup sugar ( I would try reducing this a little if the mangoes are very sweet)
4 tsp freshly squeezed lime juice, plus more to taste
1 tbsp dark rum, plus more to taste (or a few tsp of vanilla for the kids)
Pinch of salt

  Blend everything together in a food processor, then taste the finished product and add more lime or rum if you feel the mixture needs it. I added double the rum and a little more lime. 

  Chill the puree in the fridge overnight and then process in your ice cream maker according to the manufacturer instructions.  Transfer to an airtight container and freeze.  The sorbet will keep in the fridge for about a week or so-if it lasts that long!
