Huevos Rancheros Recipe

Ole! Try something different for breakfast, or even for a light dinner-a combination of eggs with home made re-fried beans, guacamole, salsa, and crispy tortilla strips to dip?  What a perfect way to to wake up. You can make your eggs however you wish, mix up the accompaniments with either bought or home made, or even pile everything in a tortilla and eat it like a breakfast burrito. Either way, this is a delicious way to begin the day.

Ingredients:

Home made guacamole (or sliced avocado)
Re-fried beans (for home made, see below)
Eggs (1 or 2 per person)
Salsa
Sour cream
Tortillas or tortilla chips
Crispy tortilla strips:

  In a warm pan, drizzle a little olive oil and add strips of tortillas, turning and tossing while they toast.  Remove to a plate.  Crack the eggs into the pan.  Fry the eggs until the bottoms and whites are mostly solid, then add a small amount of water to the pan and cover with a lid.  The steam from the water will cook the tops-watch them carefully to get them just how you like them (runny or hard).

Serve the crispy tortilla strips with warm eggs, a scoop of the beans, guacamole, and salsa. 

Home made re-fried beans:

One 19 oz can kidney or pinto beans, drained and rinsed
1 clove garlic, minced
2 tsp chili powder
1 tsp cumin
Salt and pepper to taste
2 tbsp fresh chopped cilantro

   In a skillet over medium low heat, sauté garlic in a small amount of oil until fragrant.  Add the beans and stir around a bit.  Mash them coarsely with a potato masher, then stir in the chili powder, cumin, and some salt and pepper to taste.  Sometimes the beans can seem a little dry, so you can add about ¼ cup of water and stir it around to moisten them up some.  Once they are warm, stir in the cilantro.
