These bars are a bit sandy, with a sweet jam in the middle. Kamut® is an ancient grain related to wheat, which has some natural sweetness so you don't need to add a lot of sugar. These bars are wonderful with a cup of tea, and feel free to experiment with the jam fillings to find a combination you love!
Ingredients:
1 1/2 cups Kamut® flour
1/3 cup packed dark brown sugar
1/4 cup cornstarch
2 tbsp Flaxseed
1/2 tsp cinnamon
1/4 tsp allspice
1/2 cup cold unsalted butter, cut into pieces
1 egg white
1 1/2 cups jam (I used apricot, but peach works too)
Pre-heat your oven to 350 F, and then grease and line an 8x8 inch pan with parchment paper. In a bowl, stir together the Kamut® flour, brown sugar, cornstarch, flaxseeds, cinnamon, and allspice.
With two forks or a pastry cutter, cut in the butter until the mixture is crumbly. Stir in the egg white. Press about 2/3 of the mixture into the bottom of the prepared pan. Next, gently spread the jam over top, then sprinkle the remaining flour mixture on top and press it down slightly.
Bake about 20-25 minutes until browned. Remove from the oven and let cool completely before removing from the pan and slicing.
Store squares in an airtight container in the fridge for about 5 days.
