1 English cucumber
1/2 cup crumbled feta cheese
1 tablespoon mayonnaise or Greek yogurt
2 drops Worcestershire sauce
1 to 2 teaspoons fresh mint
1/2 to 1 tsp dried dill weed
1/4 tsp ground pepper
1 tablespoon minced fresh parsley
Cut the cucumbers in half lengthwise and using a spoon, scoop out the seeds and center. Set aside.
In a bowl, mash together the feta cheese, mayonnaise, Worcestershire, mint, dill, pepper, and parsley. Stuff the filling into the cucumber boats and chill for about 15 minutes. When it’s time to serve them, cut into inch-long pieces and serve.
Makes about 20 pieces
