Butter Lettuce, Avocado, Radish Salad with Mustard Dressing Recipe

Tender lettuce, spicy radishes and creamy avocado are topped with a zesty mustard dressing, sure to be at home on your dinner plate next to some buttermilk chicken!  This salad is very quick to make, and the dressing is as easy as one, two, three. Get the kids involved by getting them to tear lettuce leaves and shake a mason jar with the dressing ingredients inside to mix it up. 

Dressing Ingredients:

1 tbsp red wine vinegar
2 1/2 tsp Dijon mustard
salt and pepper
2 tbsp grape seed oil
2 tbsp extra virgin olive oil

Salad Ingredients:

1 head butter lettuce, torn into bite sized pieces
8 slender pink French breakfast radishes or baby round red radishes, sliced thinly
1 scallion, white and pale green parts only, thinly sliced at an angle
2 tbsp roughly chopped fresh dill
1 avocado, halved, pitted, peeled and dill

In a large bowl, toss together the lettuce, radishes, scallions, dill, and slices of avocado.

For the dressing:

  Measure out the dressing ingredients into a mason jar, screw on a lid, and shake well until well mixed.  Serve  with the salad.
