Balsamic Roasted Cauliflower with Parmesan Cheese Recipe

I'm always looking for new ways to serve vegetables, to make them more interesting to my family. This is a great way to add flavour to plain old cauliflower, and roasting it adds a whole new dimension, altogether. Serve with roasted meats and watch the kids gobble it down and ask for seconds!

Ingredients:

1 large head cauliflower, cut into florets

2 tbsps extra virgin olive oil

3 cloves garlic, minced

1 tsp herbes de provence

1/4 tsp salt

fresh cracked pepper

2 tbsps balsamic vinegar

1/2 cup freshly grated parmesan cheese

 

  Preheat oven to 450F

  In a large bowl, toss the cauliflower florets with the olive oil, herbes de provence, garlic, salt, and pepper. Spread out onto a baking sheet. Roast for about 15 minutes, stirring now and then to prevent burning while they brown and soften.

  Transfer to baking dish and sprinkle cheese over top, then return to the oven for a minute or two, until the cheese melts. Serve immediately.
