Asian Baked Beans Recipe

This is based on a classic baked bean recipe, but I've used VH Sauce to add an Asian twist. The result was much better than I expected! The VH® Asian 5 Spice Stir-Fry Sauce is really complimented by the bacon and tomatoes, and the beans absorb so much of the delicious flavour!

Ingredients:

1 1/2 cups dry white beans
4 strips of uncooked bacon
A couple handfuls of cherry or grape tomatoes, quartered
1 large onion
1 cup VH® Asian 5 Spice Stir-Fry Sauce

  Rinse beans and remove any discoloured ones.

  Place beans in a large pot and cover with 4 1/2 cups of water. Bring to a boil for 2 minutes, then remove from heat and let stand for 1 hour. Drain.

  Return beans to pot and add another 4 1/2 cups of water. Bring to a boil and simmer for 45 minutes.

  Drain, reserving 1 cup of the cooking water.

  Combine beans, reserved cooking water, and all remaining ingredients in an oven-safe casserole dish. Stir, cover, and bake at 300F for 2 1/2 hours.

  Uncover and bake for another 1 hour until sauce is mostly thickened. Enjoy!
