YMC challenged ten members to get creative in the kitchen. Each person had to add their own unique twist to the recipe included on the back of the Club House Recipe Inspirations package. Here is the winning recipe Laura Snow came up with.
Spring is on its way and it's warming up outside. Because of this, I really wanted to use the Club House Recipe Inspirations Garlic Lime Chicken Fajitas to inspire me to come up with a recipe I could cook on the BBQ. I find when families eat outdoors the whole family spends more time outdoors, away from computers and television.
Being healthy as a family is a big priority for us right now.
Since this recipe was really fun to prepare, my children wanted to help. Making the kabobs became an activity we could do together as a family which was great. My daughters really enjoyed making their own individual kebabs the way they like them.
We will definitely make this recipe again—it was a big hit!
1 package Club House Recipe Inspirations Garlic Lime Chicken Fajitas
3 tbsp lime juice
1 tbsp orange juice
1 tbsp honey
2 Tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
1lb boneless, skinless chicken breasts, cubed
1/2 onion, sliced into large pieces
1 orange pepper, cubed
8 sweet grape tomatoes (or cherry tomatoes), cut in half
1 can pineapple, cubed
In a re-sealable bag combine juices, honey, oil, salt, and spices. Add cubed chicken. Refrigerate 15 minutes
Cut up vegetables and pineapple into cubes or slices the same size as chicken. When done, take chicken out of the fridge and alternate vegetables, chicken, and pineapple on skewer sticks (wood or metal).
Cook skewers on a tray on your BBQ at 400 degrees for 10-15 minutes.
Serve with rice or other summer side dishes. We also made Limeade as a summer drink to compliment the kabobs.
