Garlic Lime Chicken and Pepper Pizza Recipe

YMC challenged ten members to get creative in the kitchen. Each person had to add their own unique twist to the recipe included on the back of the Club House Recipe Inspirations package. Here is the grand-prize winning recipe Kathryn Lavallee came up with.

I wanted to put a really fun twist on the classic fajita meal, but I loved the combination of ingredients that was in the Recipe Inspirations Garlic Lime Chicken Fajitas spice packets, so I didn’t want to change them. I decided to combine two of my family’s favourites by turning a Mexican meal into a pizza for double the kid-friendly fun! With the help of a pre-baked pizza crust, whipping up this pizza only added an extra ten minutes of cooking time to the original recipe.

My boys both loved this pizza! They tend to shy away from vegetables but they both love Mexican food, so as long as a meal has a Mexican twist, they will generally devour it. Turning a classic Mexican dish into another meal they love — pizza — was a fun twist that all of us enjoyed and watching my boys gobbling up healthy red and green peppers and lean chicken had me beaming!

Ingredients:

1 packet Club House Recipe Inspirations Garlic Lime Chicken Fajitas
1 lb. boneless, skinless chicken breast, thinly sliced
3 tbsp lime juice
1 tbsp orange juice
1 tbsp honey
2 tbsp olive oil
1/2 red pepper, thinly sliced
1/2 green pepper, thinly sliced
1 pre-baked pizza crust
1 cup pizza sauce, store-bought or your own recipe
1 cup grated mozzarella cheese

 In re-sealable bag, combine juices, honey, oil, and spices. Add chicken, coat well, and refrigerate for a minimum of 30 minutes.

  Preheat oven to 400 degrees. Spread pizza sauce on pre-baked pizza crust.

  In hot skillet, stir-fry chicken and marinade over medium-high heat for 3 minutes or until cooked. Add peppers and stir-fry additional 2 minutes until vegetables are tender-crisp.

  Drain excess liquid from pan and spread chicken and pepper mixture over prepared pizza crust. Top with mozzarella cheese.

  Bake for 10 minutes until cheese is melted and crust is browned.

  Slice and serve.
