Sometimes we get really tired of potatoes, pasta, or rice for a side dish, and beans can make a great side dish. No need for long simmering with this recipe, things come together in less than 15 minutes. Serve alongside meatloaf or burgers, or you can turn it into a meal and ladle over top of rice, then top with hot sauce, shredded cheese, sour cream, and minced onions. If you don't have fresh chorizo available, any other spicy sausage will do.
Ingredients:
1 tsp oil
1 small onion
1 tomato, diced
1 tsp minced garlic
1 tsp cumin
250 g fresh, not dried, chorizo sausage, pushed out of their casings. If you can’t find fresh chorizo, use another kind of spicy sausage.
15 oz can black beans
15 oz can pinto or cannelli beans
hot sauce to taste
shredded cheese, chopped scallions, sour cream, lime
In a large, deep frypan over medium heat, sauté the onion in olive oil until softened and transluscent. Add the tomato and garlic, continuing to cook while the tomato breaks down. Stir in the chorizo and beans, cooking until the chorizo is cooked all the way through. Serve as a side dish or over top of rice as a meal.
