Cheesy Quinoa Bites

Quinoa is an excellent and easy alternative to rice and other grains and cooks really fast for quick weeknight meals. Quinoa is a known as a “superfood” because it’s gluten-free, provides a great deal of protein (almost twice that of brown rice) and contains iron, calcium, potassium and fibre.

These bites will give your kids (and you) the energy you need to make it through until dinnertime or have these with a big salad for a quick and easy meal. These also freeze well and they’re safe for lunch boxes! Make these quinoa bites ahead of time and your kids can eat them in the car on the way to soccer games too!

If your kids are totally adverse to green, you can omit the spinach OR switch it up for broccoli (sometimes that green tends to be a little less offensive to tiny mouths AND broccoli/cheddar combo? YES PLEASE). Little hands can easily grab and bite these as well and they’re great toddler food.

You can use any colour quinoa in this recipe but I find the plain white quinoa blends in nicely with the egg whereas the red or black quinoa might make kids turn up their nose. Same nutrition-but totally different look.

Cheesy Quinoa Bites

Ingredients

1 cup raw spinach, chopped very fine
¼ cup onions, finely diced (optional)
1 cup old cheddar, grated
1 cup quinoa, cooked and cooled
1 tsp fresh thyme
2 eggs
Salt and pepper

 

Directions

 Preheat oven to 350.

 Mix all ingredients together and place in a greased mini muffin tin.

 Bake for 10-15 minutes, until firm.

 Let cool for 5 minutes before taking out of pan.

Serve these warm or at room temperature. Makes 12 mini quinoa bites.
